Plant-Based "Meats" Cooking Series
Shannon will be teaching a series of classes on cooking and building meals around plant-based alternatives to meat. Classes will include discussion, demonstrations, and participants will work in pairs to cook two recipes per class. Read on for descriptions of each class!

4 week series - $100/person or $90/person if you sign up with a friend

September 7 - Tempeh
What is tempeh? How do you use it? We’ll cover how to to use tempeh in chili, tacos, and on its own. You’ll make tempeh bacon and balsamic-maple seared tempeh.
September 14 - Mushrooms
The benefits of mushrooms have been all over the news - but how do you add them into your meals? We’ll cover some basic techniques for using dried and fresh mushrooms (shiitake, button, oyster, portobello and lion’s mane) and you’ll make mushroom gravy and steaks.
September 21 - Tofu
Tofu has a lot of uses in a plant-based diet. We’ll discuss how to use it as a cheese replacement, in bowls or asian-inspired dishes, and on its own. You’ll make crispy tofu squares and baked tofu.
September 28 - Vital Wheat Gluten (Seitan)
We’ll discuss the miracle of vital wheat gluten and how you can easily use it to make your own vegan “meats”. You’ll make your own sausages and chickpea cutlets.
